It’s Cookie Season

I am doing a Cookie-Thon for a charity event with Skip1 to raise money for schools around the world and feeding programs here in the US! I was asked to participate in sharing a recipe for the holidays and since I’m spending some time with my parents in Virginia, I decided to pull out my Grandma’s old cookbook and find something old school to bake! I flipped to the cookie page and saw “Cream Cheese Cookies.” I thought, hell yeah. 

The ingredients are VERY simple which as you will see, is sort of my style when it comes to baking. I also added cream cheese frosting to top off the cookies! 

I learned after baking my first batch of cookies not to leave them in a ball but instead to press them flat, so it is easier to put the icing on them! I also overbaked my first batch, the recipe said up to 10 minutes but I would say these cookies are good to be taken out of the oven at 8 minutes!

They are certainly not the most beautiful cookies but they taste pretty amazing. The cake mixture gives them a softer texture almost like when cookies are just a little undercooked. It’s that perfect amount of soft and doughy! 

I’ll share the recipe below, I’m sure yours will come out way cuter than mine! 😂🙈

Cream Cheese Cookies:

Cake-mix cookies - light and luscious. They're so easy and quick, you'll bake them often.

Cookie Recipe:

-¼ cup butter or margarine, softened

-1 package (8 ounces) cream cheese, softened

- egg yolk

-¼ teaspoon vanilla

-1 package (18.5 ounces) yellow or devils food cake mix

1. Cream butter and cheese. Blend in egg yolk and vanilla.

2. Add cake mix (dry), ½ at a time, mixing well after each addition. (If mixer is used, add last third of cake mix by hand.)

3. Cover; chill 30 minutes.

4. Heat oven to 375°.

5. Drop by level teaspoonfuls onto ungreased baking sheet.

6. Bake 8 to 10 minutes or until light brown.

7. Cool slightly before removing from baking sheet.

Cream Cheese Frosting: 

(I halved the amount since I didn’t need all of the frosting)

Frosting Recipe:

-1 ½ cup (1 stick) unsalted butter softened

-8 oz cream cheese softened (brick-style, not spreadable)

-1 teaspoon vanilla extract

-¼ teaspoon salt

-4 cups powdered sugar* (500g)

1. Mix all ingredients and spread the frosting on top of your cookies once they cool down.
